How does pH affect the rate of an enzyme?

If the pH is too high or too low, it can break the bonds holding the enzyme together. This changes the shape of the enzyme and denatures it. The optimum pH is usually pH 7, but some like pepsin works best at pH 2 since it's in the stomach.
